Lucky little me recieved a lovely surprise on my doorstep last week from Simply Cook.
If you haven’t heard of Simply Cook before either read on or click here to find out more. Simply Cook is a new concept, it’s basically a subscription box that we all know and love but it contains healthy recipes with the seasoning and flavours to go with them. They also provide a Gluten-Free option too! There are items you need to add yourself as with any type of recipe. I’ve read a few posts based on Simply Cook where they were disappointed they had to go shopping for additional items. I on the other hand, decided to give my first recipe kit a go based on what ingredients I already had in, with a potential to ‘substitute’ those added extras where possible. After your first box too, you can edit based on your tastes and make sure you don’t recieve any of the meal kits you didn’t enjoy again! In your box, you receive 4 of these handy little ‘meal kits’ along with a recipe card to match the ingredients inside. A really helpful tear-off shopping list are attached to the recipe cards which is handy to pop in your bag for your next trip so you don’t forget! In this particular meal kit there was 3 individual pots contains Garlic & Pepper Seasoning, Chicken Stock and then a pot of Paprika & Chilli. These are easy enough to replicate if you want to make this dish again after trying it out which is a bonus as I LOVED this dish!
The great thing about them is how easy to read and fun the recipe cards are, you can let out your inner Jamie Oliver because it really felt like a relaxed way of cooking when I used one of these. It was easy to prepare and only took about 20 minutes to make too. Along with a new flavour is not experienced before and a combination of never have thought to put together, I created a wholesome healthy dish full of incredible tastes and texture.
It was smoky and spicy, filling yet light and with the right amount of richness.
I am already so eager to try out the other recipes and ingredients and see what they have to offer. So far, I am really pleased with my experience and I think the idea behind this box is a brilliant one.
What I had to do:
- Season the Cod with the Garlic & Pepper and place on a tray until ready to cook.
- Boil the Chicken Stock with water to make the broth base.
- Fry the Chorizo.
- Fry the Onions in the same pan with the Paprika & Chilli.
- Put the cod in the oven for 10 minutes.
- Mix together the stock, onions, chorizo and additional extras – Parsley & Mangetout (I substituted the Broadbeans for Mangetout)
- Serve in a dish and place the fillet on top when cooked.
- Et Voila!
